How to Make Awesome Shredded Beef Burritos Or Tacos Crock Pot
- Place a 3-4 lb beef chuck roast in your crock-pot.
- Sprinkle generously with 2 tablespoons of your favorite taco seasoning, 1 teaspoon salt, and 1/2 teaspoon black pepper.
- Top the roast with 1 (14.5 ounce) can of diced tomatoes, undrained.
- Cook on low for 8-10 hours, or on high for 4-6 hours, until the beef is fork-tender.
- Carefully remove the beef from the crock-pot and shred it using two forks.
- Return the shredded beef to the crock-pot and stir in 1 (10 ounce) can of your favorite enchilada sauce. Cook on low for another 30 minutes to allow the flavors to meld.
- Serve the shredded beef in warm flour tortillas with your favorite toppings (shredded lettuce, diced tomatoes, onions, sour cream, shredded cheese, and salsa!). Alternatively, enjoy it in hard or soft taco shells.
