- Preheat oven to 200°C (400°F).
- In a small saucepan, combine 1/4 cup balsamic vinegar and 2 tablespoons honey. Heat over medium-low, stirring constantly, until honey is dissolved and mixture is slightly thickened (about 5 minutes). Set aside.
- If baking beets from raw: Wash and scrub 1 pound of beets. Wrap each beet individually in foil. Bake at 200°C (400°F) for 1 hour, or until tender when pierced with a fork. Alternatively, microwave beets on high for 8-12 minutes (depending on size and microwave power), rotating halfway through.
- Once cool enough to handle, peel and quarter the beets. Arrange cut-side up in an oven-safe dish.
- Drizzle half of the balsamic-honey mixture over the beets.
- Bake at 200°C (400°F) for 15 minutes.
- Drizzle the remaining balsamic-honey mixture over the beets.
- Bake for a further 20 minutes, or until beets are tender and glazed.
- Serve warm or at room temperature. Enjoy!
