Ingredients for Baked Veggie Chips

  • Sweet Potato
  • Beet
  • White Potato
  • 1 large parsnip, thinly sliced
  • Canola Oil
  • Parmesan Cheese
  • Kosher Salt
  • Garlic Powder
  • Dried Oregano
  • Ground Black Pepper
  • Ketchup

How to Make Baked Veggie Chips

  1. Preheat oven to 400°F (200°C). Line baking sheets with parchment paper.
  2. Wash and peel (if desired) the vegetables. Using a mandoline slicer or sharp knife, slice the potatoes, beets, parsnips, and carrots into very thin, even rounds (about 1/8 inch thick).
  3. In a large bowl, toss the vegetable slices with 2 tablespoons of olive oil, 1 teaspoon of salt, 1/2 teaspoon of black pepper, and 1/4 teaspoon of garlic powder (or your favorite seasoning blend).
  4. Arrange the vegetable slices in a single layer on the prepared baking sheets. Make sure they are not overlapping.
  5. Bake for 20-25 minutes, flipping halfway through, until the chips are crispy and slightly browned. Keep an eye on them to prevent burning.
  6. Remove from oven and let cool completely on a wire rack before serving. Enjoy as a healthy snack or side dish!
  7. Store leftover chips in an airtight container at room temperature for up to 3 days.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
