How to Make Baked Veggie Chips
- Preheat oven to 400°F (200°C). Line baking sheets with parchment paper.
- Wash and peel (if desired) the vegetables. Using a mandoline slicer or sharp knife, slice the potatoes, beets, parsnips, and carrots into very thin, even rounds (about 1/8 inch thick).
- In a large bowl, toss the vegetable slices with 2 tablespoons of olive oil, 1 teaspoon of salt, 1/2 teaspoon of black pepper, and 1/4 teaspoon of garlic powder (or your favorite seasoning blend).
