How to Make Barbecue Lemon Chicken In The Oven
- Preheat oven to 350°F (175°C). Zest 2 lemons, reserving the zest. Juice the lemons, reserving 1/4 cup of juice. Set aside lemon halves.
- In a small bowl, whisk together the lemon zest, 1/4 cup lemon juice, barbecue sauce, salt, pepper, paprika, and garlic powder. Mix well.
- Place the whole chicken in a roasting pan.
- Stuff the chicken cavity with 1 lemon half, the minced garlic, and the rosemary sprig.
- Rub the remaining lemon zest mixture all over the chicken skin. Discard the remaining lemon halves.
- Tie the chicken legs together with kitchen twine.
- Bake for 1 1/2 to 2 hours, or until a meat thermometer inserted into the thickest part of the thigh registers 170°F (77°C). During the last 20 minutes of baking, brush the chicken with the remaining barbecue sauce mixture every 5 minutes.
- Remove the chicken from the oven and let it rest for 10 minutes before carving. Discard the lemon half, garlic, and rosemary from the cavity.
- Skim fat from the pan drippings and serve the drippings alongside the carved chicken.
