How to Make Barbecued Beef And Potato Casserole
- Heat 1 tablespoon of oil in a large non-stick skillet over medium heat.
- Add 1 medium onion, 2 cloves garlic (minced), 1 bell pepper (chopped), and 1/2 cup green onions (chopped). Cook until the onion is softened and starting to brown, about 5-7 minutes.
- Add 1.5 pounds ground beef and cook, breaking it up with a spoon, until browned and cooked through. Drain any excess grease.
- Stir in 1 (28 ounce) can of diced tomatoes (undrained), 1 teaspoon salt, and 1/2 teaspoon black pepper.
- Add 1 ½ cups of your favorite barbecue sauce and cook for 2-3 minutes, until the beef is well coated.
- Remove from heat and set aside.
- Preheat oven to 350°F (175°C).
- Spray a 9x13 inch baking pan with cooking spray.
- Arrange a layer of 2 pounds potatoes (peeled and thinly sliced) in the bottom of the pan.
- Top with half of the beef mixture and 1 ½ cups shredded cheddar cheese.
- Repeat layers with remaining potatoes, beef mixture, and cheese.
- Cover the casserole with aluminum foil.
- Bake for 40 minutes.
- Remove foil and top with the remaining 1 cup of shredded cheddar cheese.
- Bake, uncovered, for another 15-20 minutes, or until the potatoes are tender and the cheese is melted and bubbly.
