How to Make Barbecued Beef And Potato Casserole

  1. Heat 1 tablespoon of oil in a large non-stick skillet over medium heat.
  2. Add 1 medium onion, 2 cloves garlic (minced), 1 bell pepper (chopped), and 1/2 cup green onions (chopped). Cook until the onion is softened and starting to brown, about 5-7 minutes.
  3. Add 1.5 pounds ground beef and cook, breaking it up with a spoon, until browned and cooked through. Drain any excess grease.
  4. Stir in 1 (28 ounce) can of diced tomatoes (undrained), 1 teaspoon salt, and 1/2 teaspoon black pepper.
  5. Add 1 ½ cups of your favorite barbecue sauce and cook for 2-3 minutes, until the beef is well coated.
  6. Remove from heat and set aside.
  7. Preheat oven to 350°F (175°C).
  8. Spray a 9x13 inch baking pan with cooking spray.
  9. Arrange a layer of 2 pounds potatoes (peeled and thinly sliced) in the bottom of the pan.
