How to Make Brown Rice Bread Gluten Free

  1. Bring all refrigerated ingredients to room temperature.
  2. Grease a 5 x 9-inch loaf pan.
  3. In a stand mixer bowl, combine 2 large eggs, 1/4 cup olive oil, and 1 tablespoon lemon juice.
  4. In a large measuring cup, combine 1 cup warm water (105-115°F), 1 tablespoon granulated sugar, and 2 1/4 teaspoons active dry yeast.
  5. Let stand for 5 minutes, or until foamy.
  6. In a medium bowl, whisk together 1 1/2 cups tapioca starch flour, 1 1/2 cups brown rice flour, 1/4 cup nonfat dry milk powder, 1 teaspoon xanthan gum, 1 teaspoon salt, 1 tablespoon flaxseed meal, and 3 tablespoons granulated sugar.
  7. Add the yeast mixture to the egg mixture. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
  8. Mix on high speed for 3 1/2 minutes. Pour batter into the prepared pan.
  9. Cover the bread with foil and place it in a cold oven.
  10. Set a pan of hot water on a lower oven rack.
  11. Let rise for 10 minutes with the oven door closed.
  12. Remove bread from oven and place in a warm place in the kitchen to rise for another 30 minutes.
  13. Preheat oven to 400°F (200°C). The bread will continue to rise as the oven preheats.
  14. Uncover the bread and bake for 10 minutes to brown the top.
  15. Cover the bread with foil and bake for an additional 30 minutes.
  16. Turn the bread out onto a wire rack to cool completely.
  17. Once completely cooled, wrap tightly in plastic wrap to maintain freshness.
  18. **Hamburger Buns:** Pour batter into greased English muffin rings. Follow steps 9-15, but bake for only 15 minutes. Cool completely and freeze for later use. Always serve warmed.
