How to Make Caramel Fudge
- Melt 115g (1/2 cup) of butter in a medium saucepan over medium heat.
- Add 225g (1 cup) golden syrup, 395g (14 oz) can of sweetened condensed milk, and 170g (1 cup) packed light brown sugar.
- Stir constantly over low heat until the mixture comes to a rolling boil. Reduce heat to low and simmer for 10 minutes, stirring continuously to prevent sticking and burning.
- Remove from heat and stir in 340g (12 oz) of your favorite chocolate (white chocolate melts, milk chocolate, dark chocolate, or a combination!), until completely melted and smooth. For extra richness, add a pinch of sea salt.
- Line a 7cm x 25cm (approx. 3" x 10") baking pan with foil, leaving some overhang on the sides for easy removal. Pour the fudge mixture into the prepared pan and spread evenly.
- Refrigerate for at least 2 hours, or until completely set. Once set, lift the fudge from the pan using the foil overhang. Cut into squares and enjoy!
