How to Make Belgium Slice
- Preheat oven to 180°C (350°F). Grease and flour an 18 x 23cm slice tin.
- Cream together 125g softened butter and 150g caster sugar until light and fluffy. Beat in 100ml golden syrup, then add 1 large egg and beat until well combined.
- In a separate bowl, whisk together 200g plain flour, 1 tsp baking powder, and 1 tsp ground cinnamon.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Divide the dough in half. Roll out one half and use it to line the base of the prepared tin.
- Spread 200g raspberry jam evenly over the base.
- Roll out the remaining dough and place it on top of the jam layer.
- Bake for 20-25 minutes, or until golden brown.
- While the slice is baking, prepare the icing: Cream together 50g softened butter and 200g icing sugar until smooth. Gradually add 2-3 tbsp hot water, mixing until you reach a spreadable consistency.
- Add a few drops of raspberry essence (optional).
- Once the slice is completely cool, spread the icing evenly over the top.
- Sprinkle with pink jelly crystals (optional).
