How to Make Chocolate Turtle Bars

  1. Preheat oven to 350°F (175°C). Lightly grease a 13x9 inch baking pan and set aside.
  2. In a saucepan over low heat, combine 14 ounces (397g) caramels and 1/2 cup (120ml) evaporated milk.
  3. Stir constantly until caramels are completely melted and smooth. Remove from heat and set aside to keep warm.
  4. In a large bowl, combine 1 box (15.25 ounces/432g) chocolate cake mix, water as directed on cake mix box, 1/2 cup (113g) melted butter, and 2 large eggs.
  5. Mix until well blended. Pour half of the batter into the prepared pan and spread evenly.
  6. Bake for 10-13 minutes, or until edges are set. Remove from oven.
  7. Pour the warm caramel mixture over the baked cake layer and spread evenly to the edges.
  8. Sprinkle 1 cup (113g) chopped pecans and 1 cup (170g) semi-sweet chocolate chips over the caramel.
  9. Pour the remaining cake batter over the caramel layer and spread evenly.
  10. Bake for 35-40 minutes, or until a wooden skewer inserted into the center comes out clean.
  11. Remove from oven and let cool completely on a wire rack.
  12. While the bars are cooling, toast the remaining 1 cup (113g) pecans on a baking sheet in the preheated oven for 3-4 minutes, or until lightly toasted. Set aside to cool.
  13. In a microwave-safe bowl, melt the remaining 1 cup (170g) semi-sweet chocolate chips in 30-second intervals, stirring until smooth and melted.
  14. Spread the melted chocolate evenly over the cooled bars using a rubber spatula.
  15. Sprinkle the toasted pecans over the melted chocolate.
  16. Refrigerate for at least 30 minutes before cutting into bars. Enjoy!
