How to Make Colorado Cowboy Cookies

  1. Position two oven racks to divide the oven into thirds.
  2. Preheat oven to 350°F (175°C).
  3. Line two baking sheets with foil.
  4. In a medium bowl, whisk together 3 cups all-purpose flour, 1 teaspoon baking soda, 1/2 teaspoon baking powder, and 1/2 teaspoon salt. Set aside.
  5. In a large bowl of an electric mixer, cream together 1 cup (2 sticks) unsalted butter until light and fluffy.
  6. Add 1 cup granulated sugar and 1 cup packed brown sugar; beat until well combined.
  7. Beat in 2 large eggs one at a time, then stir in 1 teaspoon vanilla extract.
  8. Gradually add the dry ingredients to the wet ingredients on low speed, mixing until just combined. Be careful not to overmix.
  9. Remove bowl from mixer. Stir in 3 cups rolled oats, 2 cups semi-sweet chocolate chips, and 1 cup chopped pecans (or walnuts).
  10. Drop rounded tablespoons of cookie dough onto the prepared baking sheets, leaving 2 inches between each cookie.
  11. Bake for 16-18 minutes, or until the edges are golden brown and the centers are set. Rotate baking sheets halfway through baking for even browning.
  12. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
