How to Make Any Kind Muffins Gluten Free
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together the dry ingredients: gluten-free flour blend, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the wet ingredients: eggs, oil, milk (or milk alternative), and vanilla extract.
- Gently pour the wet ingredients into the dry ingredients and mix on medium speed with an electric mixer for 2 minutes, until just combined. Do not overmix.
