How to Make Dad's Pride Fruitcake
- Preheat oven to 300°F (150°C). Grease and flour a 10-inch tube pan or bundt pan.
- In a large bowl, cream together the butter and sugars until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
- In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Stir in the chopped nuts, candied fruit, and dried fruit.
- Pour batter into the prepared pan and bake for 3-4 hours, or until a wooden skewer inserted into the center comes out clean. Check the cake regularly from 3 hours onwards.
- Let the cake cool in the pan for at least 30 minutes before inverting it onto a wire rack to cool completely.
- Once completely cooled, drizzle with glaze (optional). Store in an airtight container at room temperature for up to a week, or freeze for longer storage.
