How to Make Deluxe Strawberry Margarita Cake

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour a 9x13 inch baking pan.
  3. In a large bowl, combine 1 box (15.25 oz) white cake mix, 1 package (3 oz) strawberry margarita mix, 1/4 cup tequila (or water for non-alcoholic version), 1/2 cup vegetable oil, and 3 large egg whites.
  4. Mix until well combined.
  5. Pour batter into the prepared pan.
  6. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the cake cool completely in the pan.
  8. Using a fork, poke numerous holes generously all over the top of the cake.
  9. In a medium saucepan, bring 1 cup of water to a boil.
  10. Remove from heat and add 1 package (3 oz) strawberry Jell-O. Stir for 2 minutes, or until completely dissolved.
  11. Stir in 1/2 cup cold water and 1/4 cup tequila (or water).
  12. Carefully pour the Jell-O mixture over the cooled cake, allowing it to soak into the holes.
  13. Refrigerate for at least 4 hours, or preferably overnight.
  14. In a separate bowl, gently fold 2 tablespoons of lime zest into 1 (8 oz) container of Cool Whip.
  15. Frost the chilled cake with the Cool Whip mixture.
  16. Garnish with pink sugar crystals, lime slices, and sliced strawberries.
  17. Serve and enjoy!
