How to Make Dream Cream Puffs

  1. Preheat oven to 400°F (200°C). Lightly grease a baking sheet with cooking spray.
  2. In a medium saucepan, combine 1 cup (240ml) water and 1/2 cup (113g) unsalted butter. Bring to a rolling boil over medium-high heat.
  3. Remove from heat. Add 1 ½ cups (180g) all-purpose flour all at once, stirring vigorously with a wooden spoon until a smooth ball forms.
  4. Return the pan to low heat and cook for 1-2 minutes, stirring constantly, to dry out the dough slightly.
  5. Remove from heat and let cool for 10 minutes.
  6. Beat in 4 large eggs one at a time, mixing well after each addition. The batter should be smooth and glossy.
  7. Drop rounded tablespoons of batter onto the prepared baking sheet, leaving 3 inches between each puff.
  8. Bake for 30-35 minutes, or until golden brown and puffed.
  9. Remove from oven and let cool completely on a wire rack. This will take approximately 1 hour.
  10. While the cream puffs cool, prepare the filling. In a medium bowl, whisk together 2 cups (475ml) nonfat milk, 1/4 cup (50g) granulated sugar, 1/4 cup (25g) cornstarch, and a pinch of salt.
  11. Cook over medium heat, whisking constantly, until the mixture thickens and comes to a simmer. This takes approximately 5-7 minutes.
  12. Remove from heat and stir in 1 teaspoon peppermint extract.
  13. Cover the pudding with plastic wrap, pressing it directly onto the surface to prevent a skin from forming. Chill in the refrigerator for at least 1 hour.
  14. Once the cream puffs are completely cool, carefully slice off the tops. Gently scoop out some of the soft dough from the inside, leaving a shell.
  15. Spoon the chilled peppermint pudding into the cream puff shells.
  16. Replace the tops.
  17. Sift powdered sugar over the top. Garnish with fresh strawberries, if desired.
