How to Make Easy And Tasty Strawberry Shortcake

  1. In a medium bowl, gently toss 2 cups sliced strawberries with 3 tablespoons of sugar. Refrigerate for at least 30 minutes to allow the strawberries to release their juices.
  2. Preheat oven to 400°F (200°C).
  3. In a separate medium bowl, whisk together 1 ½ cups flour, 2 teaspoons baking powder, ¼ teaspoon baking soda, 2 tablespoons sugar, and ¼ teaspoon salt.
  4. Add ½ cup heavy cream to the dry ingredients and stir gently until just combined. Do not overmix.
  5. Pour the batter into an ungreased 8x8 inch baking pan.
  6. Bake for 18-20 minutes, or until the shortcake is golden brown and a toothpick inserted into the center comes out clean.
  7. While the shortcake bakes, place a metal bowl and beaters in the freezer to chill.
  8. Remove the shortcake from the oven and let it cool slightly in the pan before inverting it onto a wire rack to cool completely.
  9. Once cooled, cut the shortcake into 6 squares and then cut each square in half horizontally.
  10. In the chilled metal bowl, beat 1 cup heavy cream, 2 tablespoons powdered sugar, and 1 teaspoon vanilla extract with chilled metal beaters for 1 ½ to 2 minutes, or until stiff peaks form.
  11. Spoon some of the macerated strawberries (with their juices) onto each shortcake bottom.
  12. Top with a generous dollop of whipped cream, then add the shortcake top.
  13. Spoon more strawberries over the top and serve immediately. Enjoy!
