How to Make Easy Pavlova
- Preheat oven to 150°C (300°F).
- Line a baking sheet with parchment paper and draw a 9-inch circle on it.
- In a large, clean, grease-free bowl, beat 4 large egg whites with an electric mixer until stiff, glossy peaks form. (Be sure no yolk gets in!)
- Gradually add 1 cup granulated sugar, 1 tablespoon at a time, beating well after each addition until completely dissolved and the meringue is thick and glossy.
- Gently fold in 1 teaspoon vanilla extract, 1 tablespoon lemon juice, and 1 tablespoon cornstarch.
- Spoon the meringue mixture inside the 9-inch circle on the parchment paper, spreading it outwards from the center to create a slight well in the middle.
- Bake for 1 hour, then turn off the oven and leave the pavlova inside with the door slightly ajar to cool completely (about 2 hours).
- Once completely cool, carefully remove the pavlova from the oven and peel away the parchment paper.
- In a separate bowl, beat 1 cup heavy cream until stiff peaks form. (You can add 2 tablespoons powdered sugar for extra sweetness).
- Place the cooled meringue on a serving plate and fill the center with the whipped cream.
- Top with your favorite fresh fruit slices, such as kiwi.
