How to Make English Bishop
- Preheat oven to 325°F (160°C).
- Cut each orange almost in half, leaving the bottom intact to create a stable base.
- Sprinkle the inside of each orange half generously with crushed cloves.
- Place one cinnamon stick inside each orange half.
- Using a small knife, pierce the orange skin several times to help the cloves penetrate.
- Place the oranges, cut side up, in a baking dish and bake for 30-40 minutes, or until softened and fragrant.
- Remove oranges from oven and let cool slightly.
- Quarter the baked oranges. Gently squeeze the juice from the oranges into a saucepan, adding the peels as well.
- Add 1 cup of water and simmer over low heat for 5 minutes.
- Add the port wine, sugar, lemon juice, orange liqueur (if using), and allspice (if using) to the saucepan.
- Simmer gently for 10-15 minutes, stirring occasionally, ensuring the mixture does not boil. Boiling will spoil the delicate flavor of the port.
- Remove from heat. Strain the mixture through a fine-mesh sieve or cheesecloth into a warmed pitcher or teapot to remove the solids.
- Serve warm in mugs or cordial glasses. Garnish with an orange slice and a cinnamon stick, if desired.
