How to Make English Bishop

  2. Cut each orange almost in half, leaving the bottom intact to create a stable base.

  9. Add 1 cup of water and simmer over low heat for 5 minutes.
  10. Add the port wine, sugar, lemon juice, orange liqueur (if using), and allspice (if using) to the saucepan.
  11. Simmer gently for 10-15 minutes, stirring occasionally, ensuring the mixture does not boil. Boiling will spoil the delicate flavor of the port.
  12. Remove from heat. Strain the mixture through a fine-mesh sieve or cheesecloth into a warmed pitcher or teapot to remove the solids.
  13. Serve warm in mugs or cordial glasses. Garnish with an orange slice and a cinnamon stick, if desired.
