How to Make Flatbread Dough

  1. Combine 1 cup boiling water and 1/3 cup cornmeal in a medium bowl. Let stand for 20 minutes, stirring occasionally.
  2. In a small bowl, dissolve 2 1/4 teaspoons (1 packet) active dry yeast in 1/2 cup warm water. Let stand for 5 minutes until foamy.
  3. Lightly spoon 2 1/2 cups all-purpose flour into dry measuring cups and level with a knife.
  4. Combine the cornmeal mixture, 2 1/2 cups flour, and 1 teaspoon salt in a food processor. Pulse 4 times or until just combined.

  12. On a lightly floured surface, roll each ball into a 10 x 6 inch oval.
  13. Place 2 ovals on a baking sheet lightly dusted with 1 1/2 teaspoons cornmeal.
  14. Repeat with the remaining 2 ovals on a second baking sheet dusted with 1 1/2 teaspoons cornmeal.
  15. Add your favorite toppings and bake at 475°F (246°C) for 13-15 minutes, or until golden brown.
