How to Make Anadama Bread Abm
- In a large bowl, combine 1 cup warm water (105-115°F) and 1 teaspoon sugar. Sprinkle 2 ¼ teaspoons active dry yeast over the water and let stand for 5-10 minutes until foamy.
- In a separate bowl, whisk together 2 cups all-purpose flour, 1 cup yellow cornmeal, 1 teaspoon salt, and 1 teaspoon baking soda.
- Add ½ cup molasses to the yeast mixture and stir to combine.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic.
- Place the dough in a lightly oiled bowl, turning to coat. Cover and let rise in a warm place for 1 hour, or until doubled in size.
- Punch down the dough and shape it into a loaf. Place the loaf in a greased 9x5 inch loaf pan.
- Cover and let rise for another 30-45 minutes.
- Preheat oven to 375°F (190°C).
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Chef's Tip for Extra Flavor
Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
