How to Make Fruits Afire

  1. Drain pears, apricots, and cherries, reserving the syrup from canned fruits.
  2. In a saucepan, combine the reserved fruit syrups, lemon juice, cinnamon stick, apricot preserves, and 2 tablespoons of rum.
  3. Bring the mixture to a boil over medium heat, then reduce heat and simmer until the sauce has reduced by half (about 10-15 minutes), stirring occasionally.
  4. Remove the cinnamon stick and pour the reduced syrup over the prepared fruits. Gently toss to coat.
  5. Refrigerate the fruit and syrup mixture for at least 30 minutes to allow the flavors to meld.
  6. Preheat oven to 350°F (175°C). Place the fruit and syrup in an oven-safe casserole dish.
  7. Cover the casserole dish and heat in the preheated oven for 5 minutes, or until the fruit is warmed through.
  8. While the fruit is warming, warm the remaining 4 tablespoons of rum in a small saucepan (do not boil).
  9. Carefully transfer the warm fruit to a serving dish. At the table, ignite the warmed rum (using a long match or lighter, carefully and away from your face and hair).
  10. Slowly pour the flaming rum over the fruit. Serve immediately after the flames have died down. Caution: Exercise extreme care when working with flames.
