- Combine 3 lbs plums, pitted and roughly chopped, and 1/2 cup water in a large dutch oven or heavy-bottomed pot. Bring to a boil over medium-high heat.
- Reduce heat to low, and simmer uncovered for 20-25 minutes, or until plums are very soft and easily mashed.
- Stir in 4 cups granulated sugar, 1/4 cup lemon juice, 2 tablespoons finely grated fresh ginger, and the zest of 1 lemon.
- Increase heat to medium and cook, stirring frequently, for 40-45 minutes, or until the jam reaches a setting point of 220°F (104°C) on a candy thermometer. The jam should thicken considerably and sheet off the spoon.
- Remove from heat and stir in 1/4 cup chopped crystallized ginger (optional, for extra zing!).
- Remove and discard the lemon zest.
- Carefully skim off any foam that has formed on the surface.
- Let the jam cool slightly before ladling into sterilized jars. Seal tightly and store in the refrigerator for up to 2 weeks.
