How to Make Gingery Plum Jam

  1. Combine 3 lbs plums, pitted and roughly chopped, and 1/2 cup water in a large dutch oven or heavy-bottomed pot. Bring to a boil over medium-high heat.

  4. Increase heat to medium and cook, stirring frequently, for 40-45 minutes, or until the jam reaches a setting point of 220°F (104°C) on a candy thermometer. The jam should thicken considerably and sheet off the spoon.

  6. Remove and discard the lemon zest.
