How to Make Healthy Key Lime Pie

  1. Preheat oven to 375°F (190°C).
  2. In a 9-inch glass pie plate, combine graham cracker crumbs (see ingredients), melted butter (see ingredients), 2 tablespoons granulated sugar, and a pinch of salt. Mix until evenly moistened.
  3. Press the crumb mixture firmly into the bottom and up the sides of the pie plate to form the crust.
  4. Bake for 10-12 minutes, or until the crust is light golden brown. Remove from oven and let cool completely on a wire rack.
  5. While the crust is cooling, prepare the filling: In a small saucepan, combine 1/4 cup cold water and 1 tablespoon of unflavored gelatin. Let stand for 2 minutes to soften.
  6. Place the saucepan over low heat and stir constantly until the gelatin is completely dissolved. Remove from heat.
  7. In a medium bowl, whisk together the zest of 2 limes (omit zest if using only Key limes), 1/2 cup freshly squeezed lime juice (from about 3 limes), 1 (14-ounce) can of sweetened condensed milk, and 1 cup plain Greek yogurt.
  8. Whisk in the dissolved gelatin mixture until smooth and well combined.
  9. Pour the filling into the cooled crust.
  10. Cover the pie and refrigerate for at least 2 hours, or preferably overnight, to allow the filling to set completely.
  11. Before serving, garnish as desired (optional).
