How to Make Holiday Ham A La Martha

  1. Preheat oven to 325°F (160°C).
  2. Using a sharp knife, score the ham's surface crosswise and lengthwise, creating a crosshatch pattern about 1/4-inch deep and 1-inch apart.
  3. Insert one clove into the center of each diamond created by the scoring.
  4. Place the ham, fat side up, in a double-layer disposable aluminum roasting pan. Pat 1 cup of packed light brown sugar evenly over the ham's surface.
  5. Bake for 30 minutes, or until the brown sugar just begins to melt.
  6. Pour 1 cup of Coca-Cola over the ham, mixing it with the melted sugar in the bottom of the pan.
  7. Baste the ham with the sugar/Coca-Cola mixture.
  8. Bake for another 20 minutes.
  9. Meanwhile, in a small bowl, combine 1 cup of reserved pineapple juice and 1/2 cup of dry white wine.
  10. Baste the ham with the pineapple mixture.
  11. Continue baking for a total of 16 minutes per pound of ham, basting every 20 minutes.
  12. During the last 20 minutes of baking, decorate the ham with the drained pineapple rings.
  13. Place a maraschino cherry in the center of each pineapple ring and secure with a toothpick.
  14. Transfer the ham to a platter, carefully removing all toothpicks.
  15. Garnish with fresh bay leaves, if desired.
  16. Let the ham rest for at least 15 minutes before carving. Makes 10-12 servings.
