How to Make Homestyle Hot Tamales

  1. In a large bowl, combine 1 lb ground beef (or pork), 1 medium onion (chopped), 2 oz chili powder, 1 (15 oz) can tomato sauce, 1 cup water, 1 tsp salt, 1 tsp garlic powder, 1/2 tsp black pepper, 1/4 tsp cayenne pepper, and 1 cup cornmeal. Mix well by hand.
  2. Prepare two shallow bowls: one with water and the other with 1/2 cup additional cornmeal.
  3. Take approximately 1 tablespoon of the meat mixture and shape it into a small log (about 3 inches long).
  4. Roll the log lightly in the dry cornmeal.
  5. Briefly dip a corn husk (or a piece of parchment paper) in water and then wrap the tamale, tucking in the ends to secure.
  6. Place the wrapped tamales in a large, covered roaster, arranging them in rows in opposite directions.
  7. In a separate saucepan, bring 2 quarts of water to a boil. Stir in the remaining 1 (15 oz) can tomato sauce and 1 oz chili powder.
  8. Pour the sauce mixture over the tamales in the roaster. Add more water if needed to almost cover the tamales.
  9. Cover the roaster and simmer on the stovetop for 2 hours.
  10. Serve warm with buttered crackers. Leftovers reheat well in the microwave.
