How to Make Iced Chai

  1. Bring 4 cups of water to a boil in a saucepan.
  2. Add 4 black tea bags, 1 inch piece of grated fresh ginger, 1 teaspoon vanilla extract, 1 cinnamon stick, and 2 bay leaves to the boiling water.
  3. Reduce heat to low and simmer for 5 minutes. Add 2 cups of milk (dairy or non-dairy) during the last 2 minutes of simmering.
  4. Stir in 2-4 tablespoons of honey (or to taste).
  5. Remove from heat, cover, and let steep for 3 minutes.
  6. Strain the chai through a fine-mesh sieve to remove the spices.
  7. Allow the chai to cool completely before refrigerating for at least 2 hours to chill thoroughly.
  8. Serve over ice. Garnish with a cinnamon stick or a sprinkle of ground cinnamon, if desired.
