How to Make Idaho County Applesauce Cake

  1. Preheat oven to 350°F (175°C). Grease and flour a 13x9x2 inch baking pan or two 8-inch round cake pans.
  2. In a large bowl, sift together 2 cups all-purpose flour, 2 teaspoons baking soda, 1 teaspoon ground cinnamon, ½ teaspoon ground nutmeg, ½ teaspoon ground cloves, ½ teaspoon salt, 1 ½ cups granulated sugar, and 1 cup packed light brown sugar.
  3. Add 2 large eggs one at a time, mixing well after each addition.
  4. In a separate bowl, combine 1 cup applesauce and 1 cup milk.
  5. Gradually add the wet ingredients to the dry ingredients, alternating with the milk, beginning and ending with the dry ingredients. Beat until just combined. Do not overmix.
  6. Pour batter into the prepared pan(s).
  7. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean. For 8-inch pans, reduce baking time to approximately 35-45 minutes.
  8. Let the cake cool completely in the pan before frosting.
