How to Make Jalapeno Pickle Relish

  1. Combine 2 cups thinly sliced jalapenos, 2 cups thinly sliced cucumbers, 1 cup thinly sliced red onion, and 2 tablespoons of salt in a large glass bowl. Cover with cold water and let stand for 2 hours. Drain well and press the vegetables firmly to remove excess water.
  2. In a large pot, combine 2 cups white sugar and 2 cups white vinegar. Tie 1 teaspoon mustard seeds, 1 teaspoon celery seeds, and 1/2 teaspoon turmeric together in a cheesecloth bag and add to the pot.
  3. Bring the sugar and vinegar mixture to a boil over medium-high heat. Reduce heat to low and simmer for 15 minutes.
  4. Add the drained vegetables to the simmering mixture. Simmer for 10 minutes. Remove the spice bag.
  5. Carefully pack the relish into clean, hot, half-pint jars, leaving 1/4 inch headspace. Process in a boiling water bath for 10 minutes. Remove jars and let cool completely. You'll hear the satisfying 'pop' as the jars seal.
