How to Make Lavender Cooler

  1. In a medium saucepan, combine 1 cup granulated sugar and 3 cups water.
  2. Bring to a boil over medium-high heat, then reduce heat to low. Stir frequently until the sugar is completely dissolved.
  3. Place 1/2 cup dried culinary lavender flowers in a large heatproof bowl.
  4. Carefully pour the hot sugar syrup over the dried lavender flowers.
  5. Let the mixture steep for at least 2 hours, or until completely cool. The longer it steeps, the stronger the lavender flavor will be.
  6. Strain the lavender syrup through a fine-mesh sieve, using the back of a spoon to press and extract as much liquid as possible.
  7. Cover and refrigerate the strained syrup for up to 1 week.
  8. To serve, in a large pitcher or beverage dispenser, combine 4 cups of the lavender syrup, 1/2 cup fresh lemon juice, and 8 cups of cold water.
  9. Stir gently to combine.
  10. Serve immediately over ice in tall glasses.
  11. Garnish each glass with a sprig of fresh lavender, if desired.
  12. Makes approximately 20 servings. Enjoy!
