How to Make Mango Green Tea Sorbet

  1. Combine 1 cup of water and 2 tablespoons of loose leaf green tea (or 4-5 green tea bags) in a small saucepan.
  2. Bring to a boil, then immediately remove from heat and let steep for 5 minutes.
  3. Strain the tea, discarding the leaves. Return the tea liquid to the saucepan.
  4. Add ½ cup granulated sugar to the tea and bring to a boil over medium heat.
  5. Boil for 1 minute, or until the sugar is completely dissolved.
  6. Remove from heat and let the tea cool completely (approximately 30 minutes).
  7. Peel 2 ripe mangoes and cut the fruit away from the pit.
  8. Puree the mango flesh with 2 tablespoons of fresh lemon juice in a food processor or blender until completely smooth.
  9. Add the cooled green tea to the mango puree and blend until smooth and well combined.
  10. Pour the mixture into a 9x9 inch baking dish or similar freezer-safe container.
  11. Freeze for at least 3 hours, or until mostly solid.
  12. Transfer the frozen sorbet to a food processor.
  13. Pulse for 30-40 seconds, scraping down the sides as needed, until the sorbet is light and fluffy.
  14. Serve immediately, or store in an airtight container in the freezer for up to 2 months. Let soften for 10 minutes before serving.
