How to Make Mars Bar Mud Cake

  1. Preheat oven to 160°C (320°F).
  2. Grease and flour a 4cm-deep, 22.5cm x 28cm slab pan.
  3. Line the pan with baking paper, leaving a 2cm overhang on both long sides.
  4. In a large, heatproof, microwave-safe bowl, combine 200g unsalted butter and 200g dark chocolate.
  5. Microwave on medium-high for 3-4 minutes, or until almost melted, stirring halfway through.
  6. Add 50g cocoa powder and whisk until smooth and glossy.
  7. Add 200g granulated sugar and mix well.
  8. Add 1 large egg and mix until combined. Repeat with 2 more eggs, adding one at a time and mixing well after each addition.
  9. In a separate bowl, sift 150g all-purpose flour.
  10. Gently fold the sifted flour into the chocolate mixture until just combined. Do not overmix.
  11. Pour the batter into the prepared pan.
  12. Unwrap 6-8 Mars bars (approximately 200g total) and roughly chop them into pieces.
  13. Sprinkle the chopped Mars bars over the batter and press them in gently.
  14. Bake for 60-65 minutes, or until a skewer inserted into the center comes out with moist crumbs.
  15. Let the cake cool completely in the pan before cutting into squares.
  16. Serve with whipped cream or ice cream for an extra decadent touch!
