How to Make Melt And Mix Chocolate Chunk Mud Cake
- Preheat oven to 160°C (320°F). Grease and flour a 6cm deep, 20cm round cake pan.
- Line the bottom of the pan with baking paper.
- In a heatproof, microwave-safe bowl, combine 200g unsalted butter, 200g chopped dark chocolate, and 100ml boiling water. Microwave on high for 2-3 minutes, or until smooth and melted, stirring halfway through.
- Add 100g unsweetened cocoa powder to the warm chocolate mixture and stir until completely smooth.
- Stir in 1 teaspoon vanilla extract, 200g caster sugar, and 2 large eggs until well combined.
- In a separate bowl, sift 200g all-purpose flour. Gently fold the flour into the chocolate mixture until just combined. Do not overmix.
- Pour half of the batter into the prepared cake pan.
- Sprinkle half of the remaining 100g chopped dark chocolate over the batter.
- Pour the remaining batter over the chocolate layer, and sprinkle with the rest of the chopped chocolate.
- Bake for 55-60 minutes, or until a wooden skewer inserted into the center comes out with moist crumbs clinging to it.
- Let the cake cool completely in the pan before removing.
- Once cooled, remove from the pan and dust generously with icing sugar.
- Serve and enjoy your supremely chocolatey mud cake!
