How to Make Melt And Mix Chocolate Chunk Mud Cake

  1. Preheat oven to 160°C (320°F). Grease and flour a 6cm deep, 20cm round cake pan.
  2. Line the bottom of the pan with baking paper.
  3. In a heatproof, microwave-safe bowl, combine 200g unsalted butter, 200g chopped dark chocolate, and 100ml boiling water. Microwave on high for 2-3 minutes, or until smooth and melted, stirring halfway through.
  4. Add 100g unsweetened cocoa powder to the warm chocolate mixture and stir until completely smooth.
  5. Stir in 1 teaspoon vanilla extract, 200g caster sugar, and 2 large eggs until well combined.
  6. In a separate bowl, sift 200g all-purpose flour. Gently fold the flour into the chocolate mixture until just combined. Do not overmix.
  7. Pour half of the batter into the prepared cake pan.
  8. Sprinkle half of the remaining 100g chopped dark chocolate over the batter.
  9. Pour the remaining batter over the chocolate layer, and sprinkle with the rest of the chopped chocolate.
  10. Bake for 55-60 minutes, or until a wooden skewer inserted into the center comes out with moist crumbs clinging to it.
  11. Let the cake cool completely in the pan before removing.
  12. Once cooled, remove from the pan and dust generously with icing sugar.
  13. Serve and enjoy your supremely chocolatey mud cake!
