How to Make Mother In Laws Tongue

  1. Melt 170g (6oz) butter, 200g (7oz) dark chocolate (70% cocoa or higher), and 100ml (⅓ cup) golden syrup in a medium saucepan over low heat, stirring frequently until smooth.
  2. Remove from heat and stir in 150g (1 cup) icing sugar and 50g (⅓ cup) unsweetened cocoa powder (ensure both are sifted for a smooth texture).
  3. Coarsely crush 150g (1 ½ cups) digestive biscuits and stir them into the chocolate mixture.
  4. Mix thoroughly until all ingredients are well combined.
  5. Grease and line a 21cm x 21cm (8.25in x 8.25in) baking tin (approximately 5cm deep).
  6. Press the mixture firmly and evenly into the prepared tin.
  7. Refrigerate for at least 3 hours, or preferably overnight, to allow the slice to firm up completely.
  8. Once chilled, melt 100g (3.5oz) milk chocolate in a double boiler or microwave in 30-second intervals, stirring until smooth.
  9. Spread the melted milk chocolate evenly over the top of the chilled slice.
  10. Refrigerate again for at least 30 minutes to allow the milk chocolate to set completely.
  11. Cut the slice into 25 rectangular fingers.
  12. Serve and enjoy your irresistible Mother-in-Law's Tongue Chocolate Slice!
