How to Make Anzac Biscuits

  1. Preheat your oven to 160°C (320°F). Line two baking trays with baking paper.
  2. In a large bowl, combine 2 cups rolled oats, 1 cup desiccated coconut, 1 cup plain flour, ¾ cup caster sugar, and ½ teaspoon baking soda.
  3. In a medium saucepan, melt 125g butter with ½ cup golden syrup over low heat. Stir until smooth and combined.
  4. In a small bowl, dissolve 1 teaspoon baking soda in 2 tablespoons of boiling water. Quickly pour this mixture into the melted butter and syrup, stirring constantly until it begins to foam.
  5. Pour the wet ingredients into the dry ingredients and mix well until just combined. Do not overmix.
  6. Drop rounded tablespoons of the mixture onto the prepared baking trays, leaving some space between each biscuit for spreading.
