How to Make Oaxacan Flan
- Preheat your oven to 350°F (175°C).
- In a medium saucepan, combine the sugar and water over medium heat. Cook, without stirring, until the sugar dissolves and turns a deep amber color. Carefully pour into a 9-inch flan pan, swirling to coat the bottom and sides.
- In a large bowl, whisk together the eggs, evaporated milk, condensed milk, vanilla extract, and cinnamon until well combined.
- Gently pour the custard mixture over the caramelized sugar in the flan pan.
- Place the flan pan in a larger baking dish. Pour enough hot water into the baking dish to come halfway up the sides of the flan pan (this creates a water bath).
- Bake for 30 minutes, or until the flan is set around the edges but still slightly jiggly in the center.
- Remove from the oven and let cool completely on a wire rack before refrigerating for at least 4 hours or overnight.
- Once chilled, run a thin knife around the edges of the flan to loosen it. Invert onto a serving plate and enjoy!
