How to Make Orange Bread Pudding

  1. Preheat oven to 190°C (375°F).
  2. Cube 4 cups stale bread into 1-inch pieces. Soak the bread cubes in 2 cups of milk for 10 minutes.
  3. In a large bowl, whisk together 1/2 cup freshly squeezed orange juice, the zest of 1 orange, 4 large egg yolks, 1/2 cup granulated sugar, and a pinch of salt.
  4. Add the soaked bread cubes to the orange mixture and stir gently until the sugar dissolves and the bread is evenly moistened.
  5. Grease a 4-cup oven-proof dish (or 4 individual ramekins) with butter. Pour the bread pudding mixture into the prepared dish(es).
  6. Place the dish in a larger roasting pan. Pour enough hot water into the roasting pan to come halfway up the sides of the baking dish (this creates a bain-marie for even cooking).
  7. Bake for 45 minutes for a large dish, or 30 minutes for individual ramekins, or until the pudding is set and golden brown. Insert a toothpick into the center; it should come out clean.
  8. Remove from oven and let cool slightly before serving.
  9. Chill for at least 30 minutes before serving. Serve chilled or at room temperature with whipped cream.
