How to Make Orange Liqueur

  1. Wash 3 large oranges thoroughly with soap and water.
  2. Using a vegetable peeler, carefully remove only the brightly colored zest (outer peel) from the oranges, avoiding the white pith. Be sure to remove as little white pith as possible.
  3. Pat the orange zest dry with paper towels to remove excess moisture.
  4. Place the orange zest in a clean 4-cup screw-top jar.
  5. Add 2 cups (473 ml) of high-quality vodka to the jar.
  6. Securely close the jar lid.
  7. Store the jar in a cool, dark place for 2 days, or until the vodka has absorbed the orange flavor (taste test to check).
  8. Remove the orange zest from the jar. Add another 1 cup (237 ml) vodka and 1 cup (200g) superfine sugar.
  9. Stir well to dissolve the sugar. Seal the jar tightly and store in a cool, dark place for at least 1 month to allow the flavors to meld and mature. The longer it ages, the smoother and richer the liqueur becomes. Consider aging for up to 3 months for optimal results.
