How to Make Almost Rainbow Salad
- In a large bowl, combine 2 cups chopped red bell pepper, 1.5 cups chopped cucumber, 1 cup cherry tomatoes (halved), 1 cup shredded carrots, 1/2 cup chopped red onion, and 1/2 cup chopped fresh cilantro.
- Add 1 (15 ounce) can of drained chickpeas, 1/2 cup crumbled feta cheese, and the juice of 1 lime.
- Drizzle with 2-4 tablespoons of your favorite olive oil or other oil of choice. Adjust to your desired level of oiliness.
- Gently toss all ingredients until well combined.
