How to Make Pear Honey
- Wash and core 2 pounds of ripe pears. Cut into chunks.
- Run the pears through a food chopper using fine blades until finely minced.
- In a large, heavy-bottomed saucepan, combine the minced pears, 2 cups of honey, 1/2 cup of lemon juice, 1/4 cup of water, and 1/4 teaspoon of ground cinnamon.
- Cook over low heat, stirring frequently, for approximately 120 minutes, or until the mixture has thickened significantly and become translucent. The mixture should coat the back of a spoon.
- Remove from heat and skim off any foam that has formed on the surface.
- Ladle the hot pear honey into sterilized jars, leaving 1/4 inch headspace.
- Wipe the rims of the jars clean, place lids and rings on the jars, and tighten to fingertip tightness.
- Process in a boiling water bath for 10 minutes. Adjust processing time according to your altitude if necessary. Refer to a canning guide for proper altitude adjustments.
- Remove the jars from the canner and allow to cool completely. You should hear a ‘pop’ sound as the jars seal. Check to ensure all jars have sealed properly.
