How to Make Pear Honey

  1. Wash and core 2 pounds of ripe pears. Cut into chunks.
  2. Run the pears through a food chopper using fine blades until finely minced.
  3. In a large, heavy-bottomed saucepan, combine the minced pears, 2 cups of honey, 1/2 cup of lemon juice, 1/4 cup of water, and 1/4 teaspoon of ground cinnamon.
  4. Cook over low heat, stirring frequently, for approximately 120 minutes, or until the mixture has thickened significantly and become translucent. The mixture should coat the back of a spoon.
  5. Remove from heat and skim off any foam that has formed on the surface.
  6. Ladle the hot pear honey into sterilized jars, leaving 1/4 inch headspace.
  7. Wipe the rims of the jars clean, place lids and rings on the jars, and tighten to fingertip tightness.
  8. Process in a boiling water bath for 10 minutes. Adjust processing time according to your altitude if necessary. Refer to a canning guide for proper altitude adjustments.
  9. Remove the jars from the canner and allow to cool completely. You should hear a ‘pop’ sound as the jars seal. Check to ensure all jars have sealed properly.
