How to Make Pecan Brittle

  1. Line a baking sheet with parchment paper.
  2. In a medium saucepan over medium heat, combine 1 cup sugar, 1/4 cup light corn syrup, 1/4 cup water, and a pinch of salt. Stir until sugar dissolves completely.
  3. Bring the mixture to a boil without stirring, swirling the pan occasionally. Continue boiling until the mixture reaches 300°F (150°C) on a candy thermometer – this is the hard-crack stage. This usually takes about 8-10 minutes.
  4. Remove from heat and immediately stir in 1 teaspoon vanilla extract and 1 cup pecans (or almonds).
  5. Quickly pour the mixture onto the prepared baking sheet and spread evenly to about 1/4 inch thickness.
  6. Let the brittle cool completely and harden before breaking into pieces. This will take about 10-15 minutes.
