How to Make Real Authentic Italian Tomato Sauce No Can's Here

  1. Wash and thoroughly dry 10-20 large, ripe red tomatoes.
  2. Score an 'X' on the bottom of each tomato.
  3. Blanch tomatoes in boiling water for 30 seconds, then immediately transfer to an ice bath. This will help loosen the skins.
  4. Peel the skins off the tomatoes. This can be done easily once the tomatoes have been blanched and cooled.
  5. Roughly chop the peeled tomatoes.
  6. Mince 5-10 cloves of garlic. (Adjust to your preference)
  7. Heat 2 tablespoons of olive oil in a large, heavy-bottomed pot over medium heat.
  8. Add the chopped tomatoes and garlic to the pot. Stir well.
  9. Add 1 teaspoon of dried oregano, 1/2 teaspoon of dried basil, and a pinch of salt and black pepper.
  10. Bring the mixture to a gentle simmer, then reduce heat to low. Cover and cook for at least 3 hours, stirring occasionally. The longer it simmers, the richer the flavor will become. (We recommend 4 hours minimum)
  11. Taste and adjust seasoning as needed. Add more salt, pepper, oregano, basil, or a pinch of crushed red pepper flakes for extra heat.
  12. Once the sauce has reached your desired consistency, remove from heat and let cool slightly.
  13. Blend the sauce using an immersion blender (or carefully transfer in batches to a regular blender) for a smoother consistency (Optional).
  14. Serve immediately or store in airtight containers in the refrigerator for up to 5 days or freeze for longer storage.
