How to Make Red Pepper Chicken

  1. Place 1.5 lbs boneless, skinless chicken breasts in your slow cooker.
  2. In a large bowl, whisk together the following ingredients: 1 tbsp olive oil, 1 large red bell pepper (finely chopped), 1 medium onion (finely chopped), 2 cloves garlic (minced), 1 (14.5 oz) can diced tomatoes (undrained), 1 cup chicken broth, 1 tbsp chili powder, 1 tsp cumin, 1/2 tsp smoked paprika, 1/4 tsp cayenne pepper (optional), salt and pepper to taste.
  3. Pour the sauce mixture over the chicken in the slow cooker.
  4. Cover and cook on low for 6-8 hours, or on high for 4-6 hours, or until the chicken is cooked through and easily shreds with a fork.
  5. Shred the chicken directly in the slow cooker using two forks.
  6. Serve the Red Pepper Chicken over cooked rice, quinoa, or your favorite side dish. Garnish with fresh cilantro or green onions (optional).
