How to Make Roman Kebabs

  1. Preheat your oven to 450°F (232°C).
  2. Soak 4 wooden skewers in water for at least 10 minutes to prevent burning.
  3. Cut 1 loaf of crusty bread into 12 thick slices (about ½ inch thick). Cut 8 ounces of fresh mozzarella into 12 slices.
  4. Slice 3 large tomatoes into 12 slices (3 slices per tomato).
  5. In a shallow dish, whisk together 2 tablespoons olive oil, 1 tablespoon lemon juice, 1 teaspoon dried oregano, ½ teaspoon salt, and ¼ teaspoon black pepper.
  6. Brush both sides of each bread slice with the oil mixture. Thread bread, mozzarella, and tomato slices onto the skewers, alternating ingredients and finishing with a bread slice on each skewer.
  7. Drizzle any remaining oil mixture over the kebabs.
  8. Place kebabs on a baking sheet. Bake for 6-8 minutes, turning halfway through, until the bread is golden brown and crisp, and the cheese is melted and bubbly.
  9. Garnish with fresh basil leaves and serve immediately. Enjoy!
