How to Make Rooibos Iced Tea

  1. In a large pot, combine 4 Rooibos tea bags (or Honeybush for a unique flavor), 1 cup of sugar (or to taste), 1/2 cup chopped fresh mint leaves, and 1/2 cup thinly sliced lemon.
  2. Pour 8 cups of freshly boiled water over the tea bags and other ingredients. Stir gently to combine.
  3. Allow the tea to steep for at least 20 minutes to allow the flavors to fully meld. Longer is better if your patience permits.
  4. Remove the tea bags, lemon slices, and mint leaves once the tea is cool.
  5. If using sugar, stir until it dissolves completely. If you prefer a sweeter tea, add more sugar to your liking now.
  6. Refrigerate the tea for at least 2 hours or until completely chilled for the best flavor.
  7. Serve over ice and garnish with extra lemon slices and/or fresh mint sprigs.
