How to Make Steamed Milk

  1. In each of six glasses, add 1 tablespoon of honey.
  2. In a medium saucepan, heat 4 cups of milk over medium heat. Scald the milk until small bubbles appear around the edges (approximately 5-7 minutes).
  3. Remove from heat. Add 1 teaspoon of ground cinnamon and 6 whole cloves to the warm milk.
  4. Cover the saucepan and let the milk steep for 20 minutes to infuse the flavors.
  5. Return the saucepan to high heat and bring the milk to a gentle simmer (do not boil vigorously).
  6. Remove the saucepan from the heat and carefully remove and discard the cloves.
  7. Pour approximately 2 cups of the hot milk into a blender. (Reserve remaining milk)
  8. Secure the blender lid and place a kitchen towel over the lid to prevent splashing.
  9. Blend on high speed until frothy, about 30 seconds.
  10. Pour the frothed milk into the prepared glasses, adding a layer of foam to each.
  11. Repeat steps 7-10 with the remaining hot milk.
  12. Gently stir each glass to dissolve the honey into the warm milk.
  13. Garnish each glass with a sprinkle of freshly grated nutmeg and serve immediately.
