How to Make Strawberry Chocolate Cups

  1. Melt 6 ounces of dark chocolate in a heatproof bowl set over a pan of simmering water, stirring occasionally until smooth.
  2. Using a pastry brush, thinly coat the inside of 8 paper muffin cups with melted chocolate.
  3. Refrigerate for 15 minutes, or until the chocolate is set. Repeat the coating process with the remaining melted chocolate.
  4. Refrigerate for another 15 minutes, until the chocolate is fully set. Carefully peel off the paper cups.
  5. In a chilled bowl, beat 1 cup heavy cream with an electric mixer until soft peaks form. Gradually add 1/2 cup strawberry puree and 2 tablespoons powdered sugar, beating until stiff peaks form.
  6. Transfer the strawberry cream to a piping bag fitted with a medium star tip.
  7. Place 1/4 cup sliced strawberries at the bottom of each chocolate cup. Pipe a swirl of strawberry cream on top.
  8. Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
