How to Make Strawberry Streusel Squares

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour a 13x9 inch baking pan.
  3. In a small bowl, combine 1/2 cup (60g) cake mix (any flavor, yellow or vanilla recommended) and 1/2 cup (50g) rolled oats.
  4. Cut in 1/4 cup (55g) cold margarine using a pastry blender or your fingers until the mixture resembles coarse crumbs. Set aside.
  5. In a blender or food processor, combine 1 1/2 cups (225g) sliced fresh strawberries and 2 tablespoons (30ml) water.
  6. Process until smooth. Transfer to a small bowl and stir in 3/4 cup (115g) diced fresh strawberries. Set aside.
  7. In a large bowl, place the remaining cake mix (1 1/2 cups, 180g).
  8. Add 3/4 cup (180ml) water, 2 large egg whites, 1/4 cup (60g) unsweetened applesauce, 1 teaspoon ground cinnamon, and 1/4 teaspoon ground nutmeg.
  9. Beat on low speed for 30 seconds until moistened, then beat on medium speed for 2 minutes.
  10. Pour batter into the prepared pan.
  11. Spoon the strawberry mixture evenly over the batter, spreading lightly.
  12. Sprinkle the oat mixture evenly over the top.
  13. Bake for 31-34 minutes, or until a wooden toothpick inserted into the center comes out clean.
  14. Let cool completely on a wire rack before cutting into squares.
