How to Make Sweet Potato Chocolate Bars

  1. Preheat oven to 375°F (190°C).
  2. Wash and scrub 2 large sweet potatoes. Rub with 1 tablespoon vegetable oil and place on a parchment-lined baking sheet.
  3. Bake until fork-tender, approximately 1 to 1 1/2 hours. Check for doneness by inserting a fork.
  4. Remove from oven and let cool completely. Once cool, peel and mash in a large bowl.
  5. Add 1/2 cup packed brown sugar, 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg, 1/4 teaspoon salt, 1 teaspoon vanilla extract, 2 large eggs, and 2 1/2 cups milk to the mashed sweet potatoes. Mix thoroughly.
  6. Set aside the sweet potato mixture.
  7. Reduce oven temperature to 350°F (175°C).
  8. Combine 1 1/2 cups graham cracker crumbs and 1/2 cup chopped pecans in a food processor. Pulse until finely ground.
  9. With the food processor running, gradually add 1/2 cup (1 stick) melted unsalted butter. Process until combined.
  10. Press the graham cracker crust mixture into the bottom and up the sides of a 13 x 18 inch baking pan. Use your fingers to firmly pack the crumbs.
  11. Pour the sweet potato mixture evenly into the prepared crust.
  12. In a medium saucepan, melt 12 ounces semi-sweet chocolate morsels with 1/2 cup milk over medium heat, stirring constantly until smooth.
  13. Spoon the melted chocolate over the sweet potato mixture in three lengthwise rows, about 2 inches apart.
  14. Use a knife to create a marbled effect by swirling the chocolate into the sweet potato mixture.
  15. Bake for 20-25 minutes, or until the edges are lightly browned and the filling is set.
  16. Remove from oven and let cool completely before cutting into bars.
  17. Once cooled, cut into bars and serve.
