How to Make Batatas Mashi

  1. Preheat oven to 350°F (175°C).
  2. Peel and wash the sweet potatoes. Using an apple corer or a sharp knife, carefully core each sweet potato lengthwise.
  3. In a large bowl, combine the ground lamb, finely chopped onion, rice, pine nuts, parsley, spices (cinnamon, allspice, cumin), salt, and pepper. Mix well to combine.
  4. Stuff the prepared sweet potatoes with the lamb mixture, ensuring they are firmly packed.
  5. Place the stuffed sweet potatoes in a baking dish and pour in enough broth or water to reach about halfway up the sides of the potatoes.
  6. Cover the baking dish with foil and bake for 60 minutes.
