How to Make Texas Millionaires

  1. In a heavy saucepan over low heat, combine unwrapped caramels, butter, and water. Stir constantly until caramels are completely melted and smooth.
  2. Remove from heat and stir in pecan halves. Let the mixture cool in the pan for about 5 minutes, or until slightly thickened.
  3. Drop by rounded tablespoons onto lightly greased wax paper. (For smaller candies, use a teaspoon).
  4. Refrigerate for at least 1 hour, or freeze for 20 minutes, until the caramel candies are firm.
  5. In a separate small, heavy saucepan, melt chocolate chips and candy coating (if using) over low heat, stirring constantly until smooth and melted.
  6. Dip the cooled caramel candies into the melted chocolate, allowing excess to drip off.
  7. Place the chocolate-covered candies back onto lightly greased wax paper.
  8. Refrigerate for at least 30 minutes, or until the chocolate is completely set and firm.
