How to Make Turtles

  1. Butter a heavy saucepan. Melt 1/2 cup (1 stick) of butter or margarine over medium heat. Stir in 1 cup packed light brown sugar until well combined.
  2. Stir in 1/2 cup light corn syrup until thoroughly incorporated.
  3. Gradually add 1 (14-ounce) can of sweetened condensed milk, stirring constantly until all the sugar dissolves and the mixture comes to a rolling boil.
  4. Continue cooking and stirring over medium heat, using a candy thermometer, until the mixture reaches 235°F (soft-crack stage).
  5. Remove from heat and stir in 1 teaspoon of vanilla extract.
  6. Let the caramel cool slightly until it's slightly sticky but still pourable.
  7. Preheat oven to 300°F (150°C). Spread 1 cup pecan halves in a single layer on a baking sheet. Toast for 15-20 minutes, or until fragrant and lightly browned. Let cool completely.
  8. Arrange 4 pecan halves in a spoke pattern on a parchment-lined baking sheet to form the turtle's legs, and add one pecan for the head.
  9. Drop about 1 teaspoon of the cooled caramel mixture into the center of each pecan arrangement.
  10. Refrigerate for at least 30 minutes to allow the caramel to set.
  11. Melt 12 ounces of your favorite semi-sweet chocolate chips according to package directions. Spoon melted chocolate over the caramel centers, covering the pecans.
  12. Refrigerate for another 30 minutes to allow the chocolate to set.
  13. Carefully flip the turtles over and repeat step 11 to coat the other side with chocolate.
  14. Refrigerate for at least 30 minutes more before serving. Enjoy!
